St. Theresa Prayer

May today there be peace within. May you trust your highest power that you are exactly where you are meant to be. May you not forget the infinite possibilities that are born of faith. May you use those gifts that you have received, and pass on the love that has been given to you. May you be content knowing you are a child of God. Let this presence settle into your bones, and allow your soul the freedom to sing and dance. It is there for each and every one of you.

I find this prayer inspirational, I hope anyone reading this does too. Have a blessed Spiritural Sunday!

California Vacation Pictures

Recently my husband and I went to California to celebrate my birthday. I am by no means a photographer, however I was so impressed by how great my little camera did capturing the beauty that we experienced first hand. I had too many to pick from so I choose a few of my favorites from Catalina Island and our scenic drive along the coast.

Halloween Mosaic

This is my first post on Mosaic Monday. I used Smilebox to create my collage because I am familiar with it and it's easy, which is necessary in my life! I thought I would share some of my fall/Halloween decorations before they are all stored away for another year. Thanks for stopping by and I look for to posting again in the near future!

Egg Casserole

This is my first time to participate in Foodie Friday. I thought I would share something very simple but tasty. It can be made ahead of time. I usually make it when we are having family in town or for special occasions. We usually use sausage and cheddar cheese in the casserole however, sometimes I switch it up and use diced ham and Swiss cheese for a change.

Ingredients:
8 eggs
2 cups of milk
1 tsp. dry mustard
1 cup shredded cheddar cheese
1 pound sausage
6 pieces of bread

Directions:
1. Brown sausage until well done and drain.

2. Beat eggs and then add the milk, mustard and cheese.

3. Take the crusts off of the bread and break each slice into small pieces. Grease a 9 x 13 baking dish. Then line the bottom of the baking sheet with the pieces of bread.

4. Sprinkle the sausage evenly over the pieces of bread.

4. Pour egg and milk mixture over the sausage and bread pieces. Cover and refrigerate over night.

5. Bake casserole for 45 minutes at 350 degrees. Let the casserole cool a bit before serving. Enjoy!
