Thanksgiving 2010

Thanksgiving has come and gone but I will continue to be thankful for the family I have.  The girls were both home from college and it was nice to be all together again.  The day was hectic, as usual, but in between cooking and cleaning I managed to gather everyone around for a couple of pictures before the feasting began. 

Christmas ~ 2009

After we all opened our presents we enjoyed breakfast.  Some of us also enjoyed a mimosa (or two).

Later that evening we had a great Christmas dinner.

Forgot to take a picture of the prime rib, it was delicious though.

I did, however,  get a picture of the girls with friends after dinner!

It was a wonderful Christmas, can't wait till next year!

Easy Jambalaya Recipe

Ingredients: 2 cups enriched white rice, 1 tablespoon extra-virgin olive oil, 1 tablespoon butter, 1 pound andouille sausage, 1 medium onion, chopped, 2 to 3 tablespoons all-purpose flour, 1 (14-ounce) can rotel with juice, 1(14-ounce) chicken stock or broth, 1 teaspoon Worcestershire sauce, and salt and pepper.

Directions: Cook rice to package directions.  Place a large, deep skillet over medium high heat. Add oil and butter to the pan.  Add sausage and onions and cook about 5 minutes. Sprinkle flour over the pan and cook 1 - 2 minutes more.  Stir in rotel tomatoes, broth and season with Worcestershire, salt and pepper. Bring to a boil and simmer until thickened.  Add rice and serve hot.

Ready for food...

Our Tree Adventure

With Meg being a senior and this being her last year home for the whole Christmas season, she wanted to return to a tree farm we have visited years ago with her and her sister to find our tree.  We agreed, of course, and headed out this past cold and dreary Saturday. 

We arrived at the Old Time Christmas Tree Farm and jumped on the tractor pulled "hayride."  My hubby thought it would be a great time to take a picture.  Yep, that's me hiding my face in the background.

When we jumped off they were off to find the perfect tree. As for me, I walked around and took some pictures of the scenery.

They were on a quest to find the perfect tree which meant walking up and down lots of rows of trees, many too small or too big.

Then Meg found our tree!

She was a trooper and wanted to help cut down the tree.

She's just a little too small to get the job done.  Thank goodness daddy was there to finish the job.

With a little team effort we went home with a great tree.

Thanksgiving 2009

Our oldest arrived back home Wednesday. Here are the girls on Thanksgiving night before dinner. I'm so happy to have both girls home and together!



Adam came over for dinner too. He started a fire and they sat outside in for a bit but it was pretty cold for us down here so they didn't stay out too long.

Even though we cheered and the Aggies fought hard they lost to the undefeated Longhorns. There's always next year!
